Chocolate Avocado Pudding
Serves 6
- 3 ripe avocados, peeled and pitted
- 1 cup bittersweet chocolate (minimum 72% cacao), chopped and melted
- ½ cup unsweetened coconut milk or cream, chilled overnight and whipped
- ½ cup unsweetened cocoa powder
- ¼ to ⅓ cup pure maple syrup (to taste)
- 2 tsp vanilla extract
- ¼ tsp ground cinnamon
- ¼ tsp sea salt
- Stevia, to taste (if you like it sweeter)
Instructions
- Scoop out the avocado flesh and place it in a blender.
- Add the melted chocolate, cocoa powder, maple syrup, vanilla, cinnamon, and sea salt. Blend until smooth and creamy. You may need to stop and scrape down the sides.
- Fold in the whipped coconut cream and blend again until fully combined. Make sure the chocolate is not hot.
- Taste and adjust sweetness with a little stevia if desired. Too sweet? Add a bit more cocoa powder.
- Spoon into jars or an airtight container and refrigerate for at least 30 minutes (3 hours is best for flavour melding).
- Serve in small bowls topped with fresh raspberries for a beautiful finish.
- If using as icing, scoop into a piping bag and decorate as desired. Keep chilled — it softens at room temperature.
